Made up of 96% water, cucumber is one of the lowest-calorie vegetables. It provides vitamin K.

Storage

Cucumber keeps 5 to 7 days in the fridge vegetable drawer. Do not place near fruit as ethylene makes it go soft. Once cut, cover with cling film. Cucumber does not freeze due to its water content. Salt and drain it if you want it less watery.

Origin

Cucumber originates from the foothills of the Himalayas, cultivated in India for 3,000 years. Egyptians and Romans already consumed it. Emperor Tiberius was so fond of it that it was grown in mobile frames to follow the sun. Louis XIV had it cultivated in the greenhouses of Versailles to eat it from spring.
