Concentrated in manganese and selenium, garlic is also recognised for its antibacterial properties thanks to allicin.

Storage

Dried garlic keeps several months in a cool, dry, ventilated place. Do not put in the fridge as moisture makes it sprout. Fresh (new season) garlic keeps only 1 week in the fridge. Peeled cloves keep in olive oil in the fridge for 2 weeks. Confit garlic keeps for weeks refrigerated.

Origin

Garlic originates from Central Asia and has been cultivated for over 5,000 years. Egyptians distributed it to pyramid builders for strength. Greeks and Romans consumed it for its medicinal virtues. France produces three prestigious PDO varieties: Cadours purple garlic, Lomagne white garlic and Lautrec pink garlic.
