Storage
Fresh peas quickly lose their sweetness: eat on the day of purchase if possible, or within 2 days in the fridge in their pods. Shell at the last moment. They freeze superbly after 1 minute of blanching, keeping their colour and crunch.
Origin
The pea has been cultivated since the Neolithic era in the Near East. Romans ate them dried. The fashion for fresh peas began at the court of Louis XIV in 1660, when the Comte de Soissons brought some from Italy. Madame de Maintenon wrote that the court was seized by an "impatience to eat peas".
