Storage
Rocket is fragile and keeps 2 to 3 days in the fridge vegetable drawer, in a perforated plastic bag or damp cloth. The larger the leaves, the more peppery the taste. It does not freeze. Choose young shoots for a milder flavour.
Origin
Rocket originates from the Mediterranean basin. Romans consumed it as an aphrodisiac and Egyptians pressed its seeds for oil. In the Middle Ages, its aphrodisiac reputation led to it being banned from monastery gardens. It was rediscovered by contemporary Italian cuisine and popularised worldwide.
