Rich in folate (B9) and betalains (powerful antioxidants), beetroot is also a good source of potassium.

Storage

Raw beetroot keeps 2 to 3 weeks in the fridge vegetable drawer. Once cooked, consume within 3 to 4 days. In a cool cellar, it can be stored for several months in sand. Wear gloves when peeling to avoid stubborn stains.

Origin

Beetroot originates from the Mediterranean basin. Greeks and Romans consumed its leaves, but it was in the 16th century that the red root began to be cultivated in Germany. Napoleon contributed to the rise of sugar beet in France to replace cane sugar blocked by the Continental Blockade. Red garden beetroot is now mainly grown in northern France and Picardy.
