Source of vitamin K and potassium, celeriac is low in calories and provides gentle fibre.
Storage
Whole celeriac keeps up to 2 weeks in the fridge in a paper bag. In a cool, humid cellar, it can last all winter. Once cut, rub with lemon to prevent oxidation and use within 3 days. It freezes well in blanched cubes.
Origin
Celeriac descends from wild celery, a Mediterranean marsh plant. Egyptians and Greeks used it as a medicinal plant. Selection of the large-rooted variety began in Italy in the 16th century. Cultivation spread to France in the 18th century, particularly in Brittany and northern regions.
