Storage

Winter turnips keep 1 to 2 weeks in the fridge vegetable drawer. Remove the greens immediately after buying to prevent the root from drying out. The greens can be used separately in soups. Turnip freezes well in cubes after a quick 2-minute blanch.

Origin

The turnip is one of the oldest cultivated vegetables in Europe, eaten since the Neolithic era. Before the arrival of the potato in the 18th century, it was the staple of European peasant diets. The Romans already grew several varieties. The Pardailhan turnip (Hérault) is today a prized gourmet product.
