Very low in calories, cauliflower is rich in vitamin C and folate (B9), essential during pregnancy.
Storage
Keep a whole cauliflower in the vegetable drawer for 5 to 7 days. Separate the florets and store in an airtight container for up to 4 days. It freezes perfectly after 3 minutes of blanching. The green leaves are also edible.
Origin
Cauliflower originated in the Near East, probably Cyprus. It was introduced to Europe in the 16th century by Genoese sailors. Louis XIV was very fond of it and his gardener La Quintinie grew it in the gardens of Versailles. Brittany is now the leading French production area.
