Storage
Lamb's lettuce is very fragile and keeps only 2 to 3 days in the fridge, in its original packaging. Only wash at serving time. It does not tolerate freezing. Drain gently to avoid crushing the rosettes.
Origin
Lamb's lettuce has grown naturally in European wheat fields for centuries. Long considered a weed, it began to be cultivated in the 17th century in the Loire Valley. The Nantes region now produces 85% of French lamb's lettuce. Its French name "mâche" comes from the Latin "pomum" which became "pommache" then "mâche".
