As nutritious as winter turnip, spring turnip provides vitamin C and potassium with a milder flavour.

Storage

Spring turnips are much more delicate than winter ones. Store for 4 to 5 days in the fridge in a perforated bag. Remove the greens immediately but keep them for soup. Its thin skin does not need peeling — a simple wash is enough.

Origin

The spring turnip is the early-harvest version of the turnip, picked in spring before full maturity. Cultivated in France since the Middle Ages, the Croissy turnip is a renowned Île-de-France variety. The golden ball and purple varieties are the most common early types. Its flesh is more tender and sweeter than winter turnip.
